Yesterday I made an amazing Arugala Salad w/ sauted scallops and shrimp with poached Basa fish on the side.
This was very easy.
Broil the fish in the over with crushed garlic and lemon juice and salt and pepper to taste.
While that is cooking in the oven.
Dice onions and crush garlic (as much as you want) add a little lemon juice and let heat until onions are clear.
Then add frozen scallops and baby shrimp….don’t worry there will be lots of water, just remove some of it and cook the scallops and shrimp to your liking. I like mine really well done so I leave it on the stove for about 7-8 minutes….I have to drain the water little by little a few times.
The for the salad, baby arugala tossed with fresh tomatoes and sliced onions. Add some white balsamic vinegar and a teaspoon of olive or vegetable oil. Mix it well, add to your plate, top with the scallops and shrimp and poached Basa fish on the side.
As a treat you can make some Dukan bread and add it to the side of the plate!
